Fresh granola is delicious, but in the supermarkets of the countries we travel through you sometimes pay a small fortune for it. So these days we just make it ourselves, in our Omnia oven on the gas stove, with whatever we happen to have in the house. Cheaper, tastier, and you know exactly what’s in it. This is the recipe we keep coming back to.
Ingredients
- 250 grams rolled oats
- 90 grams pecans
- 40 grams hazelnuts
- 40 grams almonds
- A splash of vanilla extract
- 1 tablespoon honey or sweetener
- 4 tablespoons coconut oil
- 2 beaten egg whites
- A pinch of cinnamon
- Optional: flaxseed, raisins, cranberries

Method
- Preheat & prep: Preheat the oven to 165°C. Line baking trays with baking paper. Or prep your Omnia camping oven with a silicone mould. Meanwhile, beat the egg whites.
- Mix: In a bowl, stir together the oats, nuts, (melted) coconut oil, cinnamon and beaten egg whites, with honey or sweetener to taste.
- Bake: Spread the mixture over the baking tray or into the Omnia oven and bake until golden brown. Stir roughly every 5 minutes for an even, crunchy bake. In the Omnia: check every so often that it isn’t burning.
- Nice and crunchy: Let it cool and, if you like, stir through some raisins, cranberries or flaxseed.
